You will need
- 4kg turkey
- 450g pork sausage meat
- 50g fresh breadcrumbs
- 2 sprigs rosemary, chopped
- 1 onion, peeled & sliced
- 50g butter
- 150ml port
- 2tsp caster sugar
- Juice 1/2 orange
- 1/2 tsp mixed spice
- 1 bay leaf
- Salt & pepper
Preheat oven to 190C / Gas 5.
Mix the pork sausage meat, breadcrumbs, rosemary and a little salt and pepper for the stuffing
Scatter sliced onion in the bottom of the roasting tin and sprinkle with salt & pepper.
Next, lay the breast skin down on a clean surface and spoon the stuffing mixture down the centre of the breast where the breast bone once was
Then bring both breasts together thus sealing in the stuffing, secure with string if preferred, and place on top of onions in roasting tin (skin side up)
Add 1cm of water to the tin and cover turkey with foil and roast for 18 min per 500g, plus an extra 20 min (don't forget to add the weight of the sausage meat)
Baste the turkey every so often with the juices
Put the remaining ingredients in a pan stirring continually until liquid has reduced and forms a syrup
Brush over the turkey and return to the oven for the last 20 min of cooking without foil.
Let the turkey rest for 20 min before serving
